We are halfway through 2016, lets celebrate it!
Thai desserts are generally sweet. However when it comes to cake, this character isn’t so saluted. This is a gentle cake with a slight hint of coffee…Thai Style! It has been compressed into a quick mix-it-all technique to deliver sweetness al pronto! You can either make the recipe as follows, or combine all in a mixer until smooth. A simple delightful cake that yields scrumptiousness in an instant. Less talking, more eating…i’ll leave this recipe to do the talking!
Light Brown Sugar 100g
Demerara Sugar 100g
Ground Coffee Granules 1 tbs (dissolved in 2 tbs hot water)
Self-Raising Flour 200g
Baking Powder 1 tsp
Milk 5 tbsp
Heat oven to 190C Fan or 170C Standard. Scrunch baking paper onto an 8inch round tin. Add 2 tbsp of hot water to coffee granules and allow to melt.
Using a bowl and wooden spoon, mix together brown sugar, softened butter, eggs, self-raising flour, baking powder, coffee and milk into a creamy batter.
Pour cake mixture into tin and bake for 30 minutes until colour turns light brown. An inserted skewer should come out clean. Once done take out and leave on cooling rack.
Once cooled, take cake out of tin and cut into rectangular pieces and serve onto plate.
